Both are 100% plant based recipes and offer a great opportunity to share a special moment with the people you love.
Key Lime Pie
-3/4 cup raw almonds
-1 cup raw walnuts
-10 medjool dates (1 cup pitted and packed down)
-pinch of salt
Process ingredients in a food processor until they stick together. (don't over process or you will have sweet nut butter). Press into pie plate and put in the fridge.
Key Lime filling
-3/4 cup fresh squeezed lime juice -1 1/2 cup avocados -1/2 cup honey
-1/8 tsp salt
-1/2 tsp. vanilla
-1/2 cup coconut oil (Garden of life)
-2 Tbs. soy lecithin
Blend all ingredients adding coconut oil and lecithin half way through. Blend until creamy then pour over crust. Chill until firm. Enjoy!
Chocolate Avocado Mousse
-4 ripe avocados
-1 cup coconut milk
-1 cup cocoa powder
-1/2 cup agave syrup, maple syrup, or honey.
-1-2 teaspoons vanilla extract or vanilla seeds
Add all ingredients into food processor or blender and process until smooth. Refrigerate then enjoy!
